History of this chicken begins in the Bresse region of France over 500 years ago where over time they developed very srict methods for raising these birds. These methods paid off big time because in France a chicken dinner of these birds can cost over $100.00

French method of raising Bresse

The methods used are rigorously controlled. The males are caponized and all the chicks are free ranged as soon as they are old enough. They are only allowed so many birds per acre. At this stage they are fed a specific low protien grain mixture of locally grown wheat and corn. NO GMO's This low protien mixture forces the young birds to go out and look for their own protien. All this is done to develope a good muscle structure and pack the bird with natural flavors.

Begining at 4 months old the Bresse are finished in specially made crates called epinettes and fed grains soaked in milk for one to two weeks before harvesting. This allowes the fat to build up throughout their muscles. The capons are allowed to mature to 7 months old before finishing. Finally they are harvested for a meal fit for a king.

What makes Bresse incredible is the unique genetic makeup that allowes them to layer their fat throughout thier muscles, packing them with exceptional flavour. Besides this they are also excellent layers of 250+ large to jumbo eggs per year. In my humble opinion this makes Bresse the absolute very best dual purpose chicken available today.

The Red White and Blue American Bresse Chicken or the ABC

Now France has had this breed for 500 years until Greenfire Farms imported them and made them available in the USA. Bresse have now been in this country only a short while and they have rightfully gathered much attention. I am sure good old American inginuity will advance this breed to the next level as many wonderful breeders across the USA have gotten on board with realizing the great potential inherant in this breed. Many are working hard to develope an American standard in order to get this breed recognized by the American Poultry association. With popularity also comes those who would monopolize and take advantage.
